What is the difference between lard and butter?

Can either one be used for the other?

Lard is used in frying or making soap. Butter is used in cooking to flavor. You can't mix them. With the new butters with olive oil or canola oil you are getting a lower fat butter that will flavor as well as give you a lower fat dish. You can use olive oil instead of butter in some recipes.

Not quite. A gram of oil has the same amount of calories as a gram of butter. Fat is fat (almost). What you get with oil is a healthier fat. Most oils are unsaturated. Lard has more fat than butter, but less of it is saturated.  add a comment

Lard is basically the same thing as pig fat. Butter is a dairy product usually made from cow's milk but other mammals milk may be used as well. Both are unhealthy but lard is the worse of the two because it is pure unsaturated fat. Butter begins to melt at room temperature while lard being hydrogenated stays in solid form.

Lard is animal fat. Butter is made from the cream that comes off the top of cow's milk in it's raw form. Lard can be used for butter in thing like crusts, but for the most part you should only use what the recipe calls for. You can find alternative recipes with lard online if you look.
