Simply, it is another synonym for many or a very large amount. For example, "there is a copious amount of food to choose from at the buffet". It is used in everyday language to describe the quantity of an item. Usually, it is used to describe something that is much more than would normally be expected.

Copious just means a large amount. For example, if someone came home drunk, you might say "He must have had copious amounts of liquor at the bar tonight to be that drunk."
