Something like "I am looking for new challenges and new opportunities, a position that will challenge me and where I feel I can contribute, like the job we are discussing".
The more general and probably best answers are "seeking better salary", "improved work hours", or "better benefits". Do NOT bash your current employer no matter how bad they are, it reflects poorly on you, not them.
