Evil lairs are usually best when they contain a scary non-existant beast such as a two headed dog or a giant snake.

Shelves of jars with weird and strange creatures floating in them. Skulls of many diffrent animals including humans. Candles holders carved from bone. On the wall there would be chains and cuffs for restraint of my victims, cast iron candle chandeliers hanging from the ceiling. A large glass tank full of eels and animal hides on the stone floor.
