A diet free from a protein found in barley, wheat, rye and most other grains. These are found in most breads, cookies, crackers and cereals. Most people who are on a gluten free diet are on it because they are allergic to gluten. They have to be extremely careful.

Gluten is the protein makeup of wheat, barley, rye and other similar grains. Many people, particularly celiacs suffer greatly from gluten in their diet, and it is proposed that children with ADHD etc may benefit from a gluten free diet. Luckily, this had become more recognized and supermarkets offer more gluten free products, such as corn pasta, etc.

It is a diet eliminating all foods that contain wheat, rye, barley, and sometimes oats. Meat, fish, rice, fruits, and vegetables do not contain gluten so you may eat these in unlimited quantities. It is also avoiding eating processed foods whenever possible.
