It depends on how you want to surprise them. Assuming you're not throwing a surprise party, having a little extra something for them upon their arrival is good. You can also do them a favor that they would normally do themselves or arrange something that they would love for them. It depends on the person.

The funny way to surprise someone is by usually ignoring about the liking of that very person and then in the end giving a surprise gift. Supposing A has a birthday on 24th, the fun way to surprise A would be not to wish A during the day rather present him in the end with the gift of A's choice.
