The main ingredients in marshmallows are sugar (both granulated sugar and corn syrup), gelatin, and air. You dissolve the sugars and gelatin in hot water, and then whip the mixture at high speeds so a lot of air is incorporated and it turns white and fluffy. The mixture dries to form marshmallows.
