Green vegetables contains good fibre and mineral such as iron and potassium, red vegetable such as tomato contain lycopene and good antioxidant.

Nutritional value is determined through chemical breakdowns of foods. To test for calories a dried piece of the food is burnt. All vegetables have different chemical compositions thus give different nutritional values.
