You could have tropical drink glasses with tiny umbrellas. Another great idea is a limbo contest. If you have a cake, you could have one that looks like a palm tree. A very unique idea would be to have real coconuts for your guests, and have a skilled person teach them how to open them.

You can hire hula dancers and have them do a performance. People always like that. Or, you can have a special section where you have a professional hula dancer giving lessons and posing for pictures with guests that they can leave with either in a frame or on a shirt, etc.
