The old standby is wood paneling. Another idea would be to add drop in celing and to put up drywall which can be painted or wallpapered.

Make a proper closet to make it spacious and then colored it with good plastic pain on the wall and make you have tiles in the floor.

Paint a sky mural on your laundry room wall to bring the outside in. For another look at the outside, hang an old window frame and paint an outside view inside the frame, then dress it up with curtains and plants.
