I enjoy snapper very simply prepared. Dredge the fillets in a mixture of flour, salt and pepper. Heat equal parts butter and cooking oil (I use canola) in a fry pan over medium-high heat. Add the fillets and fry until golden on the bottom. Flip and let the other side brown. Squeeze a lemon over top. Serve with pan juices.
