Well some easy ones are basically picking a card and having the reader look at it. Then you basically put that card in the pile, but you have to know which number you placed it at. Then take the card out and tell them you knew it was there.

Glance at the bottom card on a deck. Deal from the bottom, holding onto the last card. After showing the bottom card, shuffle, then you can find that card again.

When he calls out the cards, you simply ignore the first one, then in your head, count one, two, as he calls out the remainder. When he calls out a card which corresponds with the number you are counting, then this will usually be the card, then stop him and surprise him by naming his card.
