I like to braise tougher cuts of beef. Put beef into overproof dish, cover with one jar salsa and one bottle of beer, cover and bake at 325 degrees for 2-1/2 hours - til fork comes out easily. Serve with mashed potatoes and peas for color contrast - gravy is wonderful.

There are a number of ways to cook London Broil. You can grill it with any number of bottled steak sauces, or just plain. Or you can create your own marinade. One suggestion is to grill it with a marinade consisting of: Worchester Sauce Seasoned Salt Olive Oil Black Pepper

One unconventional way to cook a London broil steak is to cut the meat into several good size pieces. Dredge the meat in a light layer of flour. Salt and pepper well. Place in a crockpot along with 2 12 ounce cans of beef broth. Cook for about 6 hours and serve with the au juice from the pot!

A fabulous thing to do is to let the London Broil rest in a lemon marinade over night -- it will be unbelievably tender if you do that. Otherwise, it is great barbecued on the grill, often with just a little salt and some pepper. the trick with London Broil is to cut it on the bias and serve it sliced.
