miniature peppers or simply mini peppers can be used in the following: sweet pepper spinach omelet, pepper steak, mini pepper corn muffins, stuffed mini peppers, feta-stuffed mini peppers, and sweet mini pepper salad.

You can puree them to make soup (add carrot if you like). They can be stuffed with rice and vegetables, or with feta cheese. They make great chutney. They can be roasted with oil in the oven or on a barbecue. They also can be cooked on skewers with meat or vegetables to make kebabs.

Mix cream cheese with herbs and chopped onions or a little garlic. Clean out the peppers and stuff them with the cheese mixture. Make a parcel of the peppers, open end up, in aluminum foil. Roast the parcel at 320deg.F for 20 min. Serve with a dressed salad.
