You can fix up a simple cucumber sandwich but instead of bread, use wraps. Also for a condiment, avoid mayonaise and miracle whip, instead substitute thicker low fat dressings.
A great cucumber sandwich recipe that is my favorite is to combine cucumber slices with finely chopped onions and mayo in small bowl a pinch of dill will add lots of flavor, then add a splash of lemon juice and salt and pepper to taste. This is great on toasted wheat or white bread.
Try a nice whole grain bread. Add a little bit of light mayonnaise to the bread. Top with cucumbers and tomatoes if you desire. I find the mayonnaise gives it just a bit more flavor to make it really good!
Mix 1 (8 ounce) package whipped cream cheese and 1 (.7 ounce) package dry Italian-style salad dressing mix in a small bowl. Cut 1 (1 pound) loaf of cocktail rye bread into slices. Spread equal amounts of mixture on the slices. Finally, top each bread slice with 1 cucumer slice.
