Nunchaku is the more accurate word for nun-chucks. Nun-chucks is an Anglicized or Americanized version of the term. When martial arts was becoming popular in America in the mid 20th century, many terms and techniques took on common names which sounded less foreign and were easier for Americans to pronounce.
