Should I expect better mileage out of a new Cavalier?

Or would an older one work better?

A newer model will get decent mileage but you can come pretty close with a properly maintained older model in some cases.

Not only does the age of the car factor into the equation, you need to look at whether the car is a manual or an automatic transmission. The manual will give better gas milage if driven appropriately. The older Chevy Cavaliers got worse gas mileage ratings than the newer models.

You should be getting higher mileage out of a new Cavalier as the newer cars are made to have better MPG than the older cars were.
