Name 2 ways to retain nutrients during preparation, cooking, and storage?

The best way to retain nutrients in food preparation is to limit cutting or disturbing the food in any way until the last possible minute. If earlier preparation is required for whatever reason, store prepared foods in airtight, glass containers and avoid skin to food contact.

Avoid putting meat in water, avoid putting vegetables in warm water, cook with a lower heat setting, only use high heat to sear the surface of food, don't freeze food.
