A cucumber falls into the vegetable category. They are very good eaten right off the vine by themselves or in salads. They are also good as pickles.

By the botanical definition, a cucumber is a fruit, because it contains the entire ovary and the seeds of the plant, but nutritionist would call it a vegetable.
