I'm wiring a 220V cooktop. How do I go from 4-wire to 3--wire?

Change the receptacle to a three wire plug. In the three wire system, use only white wire as your neutral and ground wire and fit it properly in the panel.

You will need to change the receptacle to a three wire style plug. You can simply not use the ground wire and use the white wire as your neutral and ground in a three wire system. Make sure you have it landed correctly in the panel and you should be fine.
