A marinade is a sauce that is designed to tenderize and flavor meats. It can also be used with vegetables, especially denser ones, like eggplant. A vinaigrette is an oil/vinegar base with herbs that is used as a salad dressing, though it can also be used as a marinade.

Marinade is a sauce that you do not cook but it helps you with meats and vegetables to make them softer and more tasty. You can choose what flavor you add to the marinade.
