First start by removing all the sheetrock and screws from the ceiling. Then take new sheetrock and attach to ceiling. You might want to rent a lift to raise the sheetrock for ease. Tape and use joint compound to seal sheetrock. Sand and paint.

The easiest way is to break up the ceiling and replace with new drywall. Use a utilty knife to cut along the top edge of the wall.

This depends on if you have plaster/lathe or drywall ceiling. If you have plaster then first deal with the cracks by drilling holes along either side of the crack and injecting plaster. For drywall, make sure panels are attached to joists. Patch holes then apply texture skim coatting.

With drywall sanding paper gently sand the edges. Using a knife, fill the void with a smooth coat of drywall. Sand smooth again, and then spray stain to prevent the patch from bleeding. Allow to dry. Buy canned ceiling texture and spray it onto the repaired area.

It depends on what kind of repair you're looking for. An easy way is to install a drop ceiling, you won't have to bother with drywall, plaster, or anything messy.

Look at ceiling type options, cost and compatibility with your current construction. Ask for advice and benefits of each type of ceiling from a professional. Choose your replacement ceiling.

This is never something I would put in the DIY category because if you have to ask you proabably shouldn't do it. Word to the wise, call a contractor!
