Horse will show signs of back pain: irritability, flinching away from pressure on his back when brushed, gait alteration, general crabbiness, hot/ warm spots on the back, muscle inflammation, bucking, refusing to move forward, not standing to be mounted, reluctant to back when mounted, pinning ears, head elevation, swishing tail.

If you have got the Girth too tight your horse will probably be pretty mad. As for the actual fit of the saddle most horses don't get too upset if it doesn't fit. You can tell if a Saddle doesn't fit right because it will sit up really high on the withers.

Bucking and rearing are common reactions to an ill-fitting saddle, but horses will also display tenderness when one's fingers are run from the withers all the way back to behind the cantle. They will drop their back wincing if they are sore. If your saddle has a broken tree, horses will react the same way. Check also for worn spots.
