To turn off the auto sync functionality of iTunes, navigate to "Edit" on the menu bar and select "Preferences". On the resulting screen select the "Devices" tab. On the "Devices" page check the box which states: "Prevent iPods and iPhones from syncing automatically".

Access the iTunes library and click on your iPod under "Devices". An Options box will come up on the bottom of the screen. Click on sync only songs and videos.

You need go to edit, click on preferences, on the top of the window that opens go to syncing, the click the box that says disable automatic syncing for ipod.
