How do you make oven-roasted vegetables?

I had them at a restaurant the other day, and I loved them.

Put Vegetables chopped bite-sized,into a foil-lined lidded baking dish with 1/2 cup olive oil, a T. of rosemary, a liberal sprinkling of garlic-pepper. Bake at 350 for 40 minutes.

Choose the veggies you want in the dish, peel and chop and put them in a roasting dish, add olive oil, sea salt and herbs and bake for 30-40 minutes
