If you know a person to lie and you are able to confront them with proof of this then that may be one way to go,otherwise taking every thing they say as a lie unless confirmed by someone or by written proof may be wise.
Create situations where the person would have to lie in chains in order to get out of it. The person would realize this and that's when you point it out.
