How do they make powdered milk?

Wouldn't it all just evaporate?

Powdered milk is made by removing the water from milk by many different processes. The most common process is spray drying, where milk is concentrated and sprayed into a heated chamber. The remaining liquid evaporates, leaving only powder. Whole milk is 90% liquid, so it does not all evaporate.

Milk is an emulsion of milk solids dispersed in water. When the water is removed by evaporation, the milk solids are left behind and they form the basis of powdered milk.
