How do stir-frying and sauteing differ?

Stir-frying use high heat and typically uses more fat in it's cooking process, hence the word "fry" in the name. Saute also uses high heat but not much fat all.

Stir-frying is a kind of cooking method most widely used .First heat pot, then put oil in , strong fire heats oil, stirring with the hand shovel spoon 。It's crisp, tender. Sauteing refers to put a small amount of heating oil in then put food in it, make it ripe.
