How do I convert an inDesign document to grayscale?

You will want to export the document to another format that you can load in an alternate program. PostScript or PDF preferably. You can manipulate these further through Acrobat Professional or similar and change the color scheme to grayscale. Or you can export to an image and change the colorscheme in paint, photoshop, the gimp, or whatever.

One of the easier ways to do it is when you print in. Go into the printer options and make sure that the grayscale box is checked. This will be in a slightly different spot. Then you can keep your colors in your file, but still print it without any color.

Export a postscript file and distill it and open it in Acrobat Professional. Go to:Tools > Print Production > Convert Colors. Convert everything to grayscale in there using an approprate profile (such as Dot Gain 20%) and you will not have a grayscale PDF. This is sort of my standard workthrough for newspaper mechanicals.

You have two possibilities: export your document with the option print or choose the option inripseparation when you print the document.
