Does anyone have recipes for Vietnamese kim chee?

I would like to learn to prepare it.

Years ago I worked at a restaurant that made Kim Chee for the workers, not the public. Phew! I would search online sites for vietnamese recipes or try the library.

Napa cabbage sea salt 1 Tablespoon fish sauce small green onion chopped small white onion minced 1 garlic, pressed 2 tablespoons white sugar 1 teaspoon ground ginger 5 tablespoons Korean chile powder Rub salt into chopped cabbage leaves. Seal in large jar 6 hours. Rinse, Drain, put in jar, stir in rest of ingredients. Wait 4 days. Refrigerate before serving.

Kim Chee is a Korean dish. My advice is to find a Korean Kim Chee recipe that you like and add aromatics and greens commonly used in Viet-cooking i. e. cilantro, basil, chiles, watercress, lemongrass and mint.

Wash and cut 1 1/2 lbs. mustard greens and a bunch of scallions. Spread to dry thoroughly. Mix in a bowl with 4 cups water, 5 1/2 teaspoons salt and 1 1/2 teaspoons sugar. Weigh down the greens, cover, and keep in a warm place for 2-3 days. Transfer to a jar and chill.

2 large heads napa cabbage, radish, green onions, 8 cups watter, 7 tabs fish sauce, 1 cup salt. Marinated for 1 week in refrigerator. This is delish.

I don't have a recipe but I think you have misspelled the cabbage dish. I believe it is kim chi or kimchi.
