You do not use a crumb topping for peach cobbler you can use a pie crust or a sweet bisket dough. I just mix up some bisket dough from a box and add about half cup of sugar or brown sugar to it with maybe some vanilla. Then pour it on the peaches and bake.

It is perfectly acceptable to use crumb topping for a peach cobbler. You could also do what is called a lattice topping for it.
