Yes they usually hold more value if you are collecting. New stamps are ridiculously common so collecting new stamps will not hold much worth until they are cancelled.
Unless the stamp is really rare stamps that have gone through the mailing system and are now used aren't worth as much as a new stamp. They do have some value but most of the time it's menial.
