Can you help me troubleshoot a 1987 Chevy Blazer that is stalling when going up an incline?

Usually, when a vehicle stalls with a type of load it is due to spark or fuel. The first system to check on fuel is the fuel filter.

One of the main problems I can think that could be water in the engine. It's fairly easy to replace any and all gaskets in any make or model car.

The '87 Blazer has a carburetor as the way to get fuel into the engine. The carburetor uses gravity to spray fuel. When the truck is on an incline, the force of gravity is not down into the engine but off to the side, starving the engine of fuel.

One of the main problems I can think is that if it is happening when you are going up a hill is it is a fuel issue. It sounds like the pump is going because all the gas would be at the back of the tank on the incline.

When the engine is under any load it sounds like it stalls. I would recommend checking the plugs, wires, distributor, and distributor cap. The first items I would replace are the fuel filter and the air filter. Both are cheap and could be the cause of the issue.

Sounds like an intake gasket leak. Or a vaccum leak of some sort. Another option could be water in the engine. Its fairly easy to replace any and all gaskets in any make or model car.
