Yes, you can them for version one and two, ussing Alcholol 120% and Nero, even you can download them as CD image format file for Playstation 1 games and DVD format for Playstation 2. However they will not work on all consoles, you will need to modify the console or play them in any emulator.

For PS1 and PS2, yes, you can. It is perfectly legal to make copies, or backups, of games which you own the actual real disc to.
