If you want to follow general etiquette, use blue or black ink. Anything else looks eccentric, juvenile or distracting. Save ink in unusual colors for art projects or perhaps letters from children. For a close family member or friend, if pink has some special meaning for the two of you, use it. And good for you for writing thank-you notes!

I'd advise not to use pink ink on thank you notes. It would indeed look rather juvenile in that context.
