Why do plane ticket costs vary so much?

The same flight can be several different prices.

It's rather like an auction. They have a limited number of seats and they want to get the best prices for them. Then again, they don't want to fly with empty seats so they will offer 'deals' to fill the seat. A lot depends on the destination and demand.

There are limited seats per flight in each price range. Once the cheaper tickets are sold out the cost of the tickets go up. Also, certain 3rd party companies such as have a certain amount of seats to sell as well.

There are several different factors that have to do with the price. The airline, how many stopovers, where you're going; the time of year is probably the most important one. If you want to fly when everyone else does too, then it will cost you more.

Sometimes different airlines will have various specials. Their interest is to get people to pay the most for tickets possible.
