Why do apples develop a yellow tinge shortly after you bite them?

Apples turn yellow or brown after you bite/cut them due air exposure. When the iron that is inside the flesh of the apple touches the air it causes a reaction. This reaction is called oxidation and happens with every color and type of apple. You can use lemon juice or cut the apples in water to help retard this oxidation.

Enzymes are natural particles that cause a reaction to occur more quickly. Many fruits and vegetables contain natural enzymes that promote ripening. When these enzymes interact with oxygen in the air, it can cause the fruit to turn brown. Apples are a perfect example of this. They are still safe to eat, it's just been exposed to the air.

When the inside of the apple is exposed to the air, it becomes oxidized. This oxidation turns the flesh of the apple brown. The process is similar to metal rusting: the metal is exposed to the air and it becomes brown. Oxidation in food is harmless. The apple is still safe to eat. It just looks unappealing.

This is an oxidation reaction. Some of the chemicals compounds in the apple react with atmospheric oxygen and this is what causes the yellowing.

Because of oxidation. The oxidation cannot be stopped, so when you start eating an apple, you should finish it as fast as possible if you don't like those yellow tinges.
