The very best fats for deep frying are either lard or shortening, but if you only want an oil, try peanut oil. It can reach a high temperature without burning.

Well for a lot of how fast frying you want a oil that is very pure and has a high smoking point. Peanut oil and canola oil are a few good option but look around.

When you are frying, you will want to use an oil that can reach high temparatures without burning. The best oil for frying is peanut oil or vegetable oil. Vegetable oil will be cheaper than peanut oil.

For general purposes, Canola (rape seed)oil is probably the best compromise. It is healthy, and cheap, and it works. The next best is corn oil, which costs more. Lard is the traditional answer. Don't bother trying expensive things like olive oil - they don't cook hot enough.
