When is a cat too old to declaw it?

I worry about the recovery.

Declawing a cat is okay until it is about middle aged (after 5) but I wouldn't personally have it declawed after 1 year old.

Once the cat is well into it's adult stage of life it doesn't recover from trauma as well as it did when it was younger. Best to do it before age 6 or 7 at the latest, not the mention the mental aspect of your cat going years with it's claws and then one day they're gone.
