What's the best baking flour?

I'm making cakes.

Ordinary plain white flour will give you the most control over your cake and the lightest texture. you will need to add your own baking powder or use another means (such as egg whites) for getting the cake to rise. You will also need to salt to taste.

You can use cake flour, and this will make it easy to get good results. However, you can also use all-purpose flour without any problems.
