Fruit changes it volume, it becomes smaller during cooking. Also the sugar in the fruit causes to get a sirop from it and last the fruit becomes heated during cooking

during cooking fruit will change its colour,as some fruits have iron in it.secondly their texture and we can also change its taste by adding some other things
