What sort of nutrition do night shift workers need?

Simple carbs and sugars may serve to provide a brief lift, but generally there is a crash that follows. Complex carbs and small snacks of protein, yogurt and fresh fruit, carrots sticks and celery, and lots of water are best. A small snack every few hours is better than one large meal. Caffeine dehydrates, so don't load up on it.

Eat lots of small meals, and avoid a large meal before going to work. Eat small meals during work if you can. Choose exercise over caffeine for energy.

Night shift workers do not need a special diet. They may need to consume more vitamin D if they are not out as much during the day if sleeping then, though this can be mitigated by exposure to sunlamps or tanning lights. They may need to consume more calcium to make up for that lost with high caffeine consumption.
