What kind of metal are good pans made of?

I needed a good pot for canning last summer I bought a pan made by the DENMARK company from Bed, Bath and Beyond it's a wonderful pot for a number of reasons it heats quickly and evenly and cleans easily. I believe they are made of oxidized aluminum.

Out of all of the pans that I have used, I personally prefer T-Fal Pans. They seem to cook the food really well, and come clean very easily.
