You should see a gastroenterologist (GI doc.) A GI specializes in organs of digestion. Some have special knowledge about liver disease or pancreatitis. He might also refer you to a hepatologist (liver specialist) or endocrinologist (specializes in the endocrine system and diabetes.)

The next step would be a gastroenterologist, who specifically treats problems of the digestive tract. If possible food allergies like gluten intolerance are found, you would see an immunologist.
