What is wrong with my Betta fish, who is losing his color?

Sounds like he is sick. If he is in a tank with other fish quarantine him now. From now on change his water twice a day. After feeding promptly remove any uneaten particles, as they can rot and cause more bacteria. After his color has returned to the bright state feel free to return him to the original tank.

There are a few reasons your Betta could be losing its color. First look at the food you are feeding it. Make sure it is Betta food and not some other fish food. Also, it could be due to dirty water or untreated tap water. It also could be due to old age or some sort of infection.
