Your cousin's children are also your cousins, but in a different way. Say Bob and Dave are first cousins, and Bob has a daughter, Mary. Dave and Mary are first cousins, once removed (which translates to "one generation below the original connection").

Your first cousins are the children of your parents' siblings. When your first cousins have children, those children are "first cousins once-removed" to you. Your children are second cousins to your first cousins once-removed.
