6 cups dashi stock, 2 leeks, 4 fresh spinanch, a chicken breast cooked, 1 lb udon noodles, 4 eggs, 4 shiitake mushrooms, 6 oz thinly sliced kamaboko. Cook noodle approx 5 min, boil dashi, cook spinach for 30 sec, cut into 2" pieces, cut leeks into 1" slices, chicken into 4 equal pieces. Put all ingredients in bowl-top with stock.
