The difference between the volumes of developers is that 20 volume gives 2 shades of lift and is your standard. Lift being the power to lift your color from where it is to where you want it to be. So if you use 30 volume, it gives you 3 shades of lift.

Depending on the types of developer, some areas of the hair can be lighter or darker. Different volumes of developer can add different levels of texture to your hair.

Developer effects the intensity of the colour you are using to colour your hair. It generally makes it lighter, the higher developer you use. Different brands work differently and with varying intensities. It's best to play around and see which one you like the most and/or ask someone who has used it before.
