A formal interview means the questions are set and both parties know what is going to be asked before the interview. The questions are usually gone over in advance and there should be no surprises. This allows the interviewee more control. An informal interview is when a topic is usually set but specific questions aren't gone over ahead of time.

Informal is a general meeting about the job, formal is when you are being taken serious to fill the position. Usually after they talk about giving you a second interview.

A formal interview is more serious and usually used to see if a candidate is right for the position. While an informal interview can do the same thing, these interviews can also be simply informational in nature.
