Chips are deep fried, usually in a vegetable oil. Cut thick slices of potato (1/4" square, length of the potato) and fry at a heat where the oil is bubbly.

Chips are basically just thick cut French Fries. To cook the fish for fish and chips dip the fish, preferably cod, in a batter and then deep fry it.

French fries usually have some kind of batter or a salt coating before being fried (to keep them crispy) and often have an assortment of spices to flavour them. Do not do this with chips. Any of it.  add a comment

Another traditional English dish is "pease pudding". It's made by boiling a bacon joint - ham hock will do if you can't get that - and then soaking split yellow peas overnight in the water, before boiling them in a cloth in it. Serve as a main dish.

The fish is fish in crumbs or batter, also deep fried at the same temperature.
